Harvesting takes place in early September. The must is obtained with a soft pressing of the grapes, and is processed with careful control of the temperature, so as to keep intact the natural aroma of the grapes. This produces a wine that is characterized by a pleasant fruity fragrance. This same attention is paid during all phases of storage and fermentation, controlling oxygen exposure in order to preserve all the aromatic precursors that are to be found in the glass during consumption.
Millesimato - Extra Brut
In the glass it is pale straw-yellow with green highlights. It has a subtle perlage with great constancy and persistence. On the nose, after an initial floral nuance, it becomes full and fruity, while maintaining
the natural elegance typical of the grapes from which it comes.
Very complex in terms of quantity and quality of olfactory sensations, highlights include the nashi fruit, with characteristics between the Golden Delicious apple and pear, all the way to a delicate mineral note. In the mouth its intensity excites, with
good structure and a pleasant, fresh acidity; with an excellent balance between the olfactory and retro-olfactory sensations.
As an expression of the company’s excellent sparkling winemaking ability comes the Asolo Prosecco Superiore DOCG, a high-quality wine made from our best vineyards. This particular wine is characterized by its originality in the Prosecco landscape.
The most exacting discipline of the territory and limited production preserves its uniqueness and qualify it as a true gem waiting to be discovered.
The Glera grapes of the Asolo hills mature toward the end of September. After a first soft pressing, the must is fermented at a controlled temperature through the use of selected yeasts. After fermentation, the wine is filtered and stored, then re-fermented in an autoclave, with the addition of liquer de tirage, at a temperature of 16 degrees Celsius. Once obtained, the sparkling wine is chilled to -4 degrees Celsius and left in contact with the lees in order to extract the most of the aromas. Once the refining process is complete, the product undergoes isobaric filteration in a second autoclave and is then bottled.
The wine is straw yellow in color with green reflections.
The fresh, fruity aroma is reminiscent of acacia flower, wisteria and Golden Delicious apples. It is the perfect Italian aperitif: its fine bubbles that rise in the glass create an instinctive festive atmosphere and its good structure, unusual for a Prosecco, satisfies even the most demanding palates.
At the same time, the elegance of its aromas and its softness make it attractive to all winelovers. Prosecco is well-suited to accompany the best raw fish dishes as well as steamed seafood and shellfish in sauce.

This first phase of slow fermentation is monitored daily. The same attention is given to the second fermentation, monitored in every detail from the choice of yeasts and the processing temperature. The product is stabilized, then filtered and bottled.

subtle and persistent, enhancing the soft, youthful fragrance.

The wine is made from grapes from our best vineyards, which are selected according to strict rules, and is the result of the careful work of a field technician. The base wine, once completed with selected yeasts and sugar, is fermented in an autoclave at controlled temperatures. Once fermentation is complete, the stabilization and filtration processes take place, and the resulting wine is then bottled using modern technology.
The Asolo DOCG Sparkling Prosecco is the most versatile of proseccos.
Light, exuberant, fruity and easy to drink, it is perfect for toasting on festive occasions, as well as to enjoy daily moments of pleasure, perhaps in the company of friends. It also pairs ideally with vegetable or seafood soups, pasta with delicate meat sauces,
fresh cheeses and white meat.
Prosecco is now considered an indigenous variety of the hills of Conegliano and Valdobbiadene where tradition and the quality of the grapes express the best of their features. The calcareous soil, old vines and exposure to the sun are a unique combination that is expressed in sweet, aromatic sparse grapes. The second fermentation is slow, the yeast slowly giving off bubbles that become fragrant and persistent.
The grapes, once they have reached aromatic maturity, are harvested by hand, and transported to the winery using crates with a maximun weight of 15 kg where they are then subjected to a soft pressing in order to obtain the first-pressing must. The must is then decanted and the fermentation is then activated using selected yeasts. At the end of this fementation, the wine obtained continues its refinement for another two months and then undergoes a second fermentation in autoclave, according to the Martinotti method.
