MONTELVINI INTRODUCED “FM333”, THE FIRST CRU OF THE ASOLO DOCG, UNIQUE IN ITS KIND

Montelvini introduces the new Asolo Prosecco Superiore DOCG Brut Millesimato 2020 “FM333”, the first Cru of the Asolo DOCG appellation that embodies the Venetians winery constant research into increasingly innovative wine-making techniques. An expression of the excellence of the region and the result of a new sparkling wine technique, the new Asolo Prosecco Superiore DOCG stands out for its wonderful fragrance, originality and unmistakable style. The name “FM333 ” comes from the initials of “Fontana Masorin”, the historic estate owned by the company that is home to the grapes used for making the wine, together with its height above sea level. A vineyard and soil of rare excellence which, thanks to a great deal of study and research, have contributed to the creation of an exclusive, unique product. “For us it is a dream come true, the end of a research journey we have been developing in the last years, representing the excellence of our company’s wine making skills.
However, the real innovation represented by “FM333” lies in the vinification technique which differs from that used traditionally for Prosecco and uses single rather than double fermentation. The grapes are selected manually and only the “Mosto Fiore” (The highest quality of the extracted must) is used, which is then stored at controlled temperature in order to extract a higher intensity of aromas. The must is then clarified by static decantation, without the use of any additives. It then undergoes a single fermentation in stainless steel pressurized vats, in order to obtain its characteristic perlage. Finally, at the end of a six-month journey, “FM333” is born, a “sparkling wine from must”, unique in its kind.
